Naleśniki for Marcin

Two weeks of having Martin at home every day is coming to a close. He is currently between jobs. While we are excited about his new job and what it means for our family, it will be hard going back to doing it all by myself during the day. It's rather spoiling to have a whole other adult around to help out

I wanted to make Naleśniki in honor of Martin's last weekend of freedom from the work force. And here is the recipe I found. (I especially love the last line of the directions... they might as well just write... "we haven't made this ourselves so this recipe might be crap, but here you go anyway.") I'll let you know how mine turn out!

Ingredients

Batter:

  • 2 cups milk
  • 2 cups sparkling water
  • 1 egg
  • 1 egg yolk
  • 3 cups al-purpose flour
  • 1 cup sugar
  • 1 pinch salt
  • 1/2 tablespoon baking soda
  • 1/2 tablespoon baking powder

Filling:

  • 4 cups cream cheese
  • 3 cups sugar
  • 1 (24-ounce) jar drained, pitted sour cherries in a light syrup
  • Cooking spray, for pan
  • Whipped cream, for serving
  • Chocolate powder, for serving

Directions

For the batter:

Mix all the ingredients well in a blender and refrigerate for 1 hour.

For the filling:

In a large bowl, add the cream cheese, sugar and the cherries. Combine well and reserve.

Spray a frying pan with cooking spray. Pour 1/2 cup of batter into the pan and cook until firm (tan, not brown). Turn over and cook the other side. Transfer crepes to a large plate and repeat with remaining batter.

Fill the crepes with the cheese filling and fold as desired. Arrange on a serving platter and serve hot, with whip cream and chocolate powder.

  1. LOVE the video. Fast-mo is a superb choice, especially when Martin's zombie side comes out at the end. The nalesniki sounds like a kolache. Is that blasphemous?

  2. Yes, it's Blasphemous. Kolache's are Czech. No comment on the Czech's.

    Nalesniki are more like crepes.
